I don't like the egg substitute powders, so I poked around on the internet and found a site that recommended subbing 1/4 c applesauce or fruit puree for each egg in a recipe. It also warned to make sure there was a source of leavening since the fruit would not do that. So I tried making my blender pancakes with the applesauce instead of eggs and increasing the amount of baking soda and powder. They were fabulous - light, fluffy, great texture. They browned faster on the griddle, so I had to be more observant, but they got great reviews from my family. My boys used strawberry syrup on their cakes and said they could not taste any apple flavor. My daughter and I used pancake syrup and we tasted a very light hint of apple, but we were trying to taste it. It didn't interfere with the flavor of the toppings we chose.
Just wanted to post this for anyone looking for an alternantive to eggs. I just ran out of eggs and was desperate for a substitution, but I'm quite pleased with the result!! I don't know if the results would be similar with bread, but the pancakes worked great!  _________________
